CHAPULÍN, A TRIBUTE TO MEXICAN CUISINEThe concept was conceived by Braulio Arsuaga Losada, General Director of Grupo Presidente, and his team of executives in the food and beverage area, together with a group of professionals in design and architecture, as a replacement for La Chimenea, the first restaurant at Hotel Presidente InterContinental Polanco. This is how Chapulín Restaurant opened its doors in 2015.The kitchen is led by Chef Josefina López Méndez, a graduate of the Gastronomy career at the Anáhuac University of Oaxaca, and who served for 5 years as Sous Chef at the Pitiona restaurant in the same city. Josefina is a great connoisseur of Mexican cuisine, her mastery and passion for Mexican ingredients have enabled her to maintain, with creativity and dedication, the varied menu of this modern gastronomic space, proposing traditional dishes with original touches, as well as her own inspired recipes.The architectural project of Chapulín was done by Rafael Sama, from SAMA Arquitectos, who developed a concept that reflects a modern Mexico, playing with Mexican elements such as fired clay, oak wood, talavera tiles, and national granites.The renowned Mexican sculptor, ceramist and multidisciplinary artist, Adán Paredes, made in his workshop Los Alcaranes, in Oaxaca, 96 different molds to produce the 11,000 numbered pieces of fired clay that make up the walls of Chapulín, making them a great work of art.The furniture design is a mix of marquetry and wickerwork by designer Jesús Iriziar, from the MOB design firm. On the other hand, Mexican artist Nacho Rodríguez Bach designed a piece of digital mosaics with representative photos of Chapultepec, simulating an impressive digital kaleidoscope that can be seen at the entrance of the restaurant.In its first years of operation, Chapulín has become a favorite Mexican restaurant, as its gastronomic proposal combines traditional recipes with the modern and creative touch of the chef.In 2014, Chapulín received the award for Best Architectural Design from Architectural Digest magazine, and for the last three consecutive years, it has been included in the list of the best 120 restaurants in Mexico by the Nespresso and Culinaria Mexicana guide.To offer diners new flavors and stay at the forefront of the growing culinary wave that has taken place in our country in recent years, renowned Mexican chefs are collaborating on the Chapulín menu, such as Yucatecan Chef Pedro Evia from the k'u'u'k restaurant in Mérida, who currently has a selection of 15 dishes on the menu.
